Spring Baking Championship Season 11 released its fourth episode on March 31, 2025. The latest episode featured a faux eggs dessert dish preparation as the pre-heat challenge. For that, bakers had to bake their version of a baked dessert dish that looks like "eggs" but tastes like a "dessert."
While preparing their unique and creative versions of the "faux eggs," two of the bakers, Mary-Frances Bahun and Lisa Clark, shared about the dessert dish they were preparing with each other.
When Mary-Frances revealed that she was baking a banana coconut cake, Lisa said she was also making a similar coconut cake. Learning about Lisa's dessert, Spring Baking Championship's Mary-Frances exclaimed:
"Twinsies!"
She added:
"Mango, banana, and coconut because it's tropical and I'm tropical."
Spring Baking Championship Season 11 Episode 4: Mary-Frances and Lisa open up about their version of the faux egg dessert dish during the pre-heat challenge
During the fourth episode's pre-heat challenge, Mary-Frances Bahun, from Calgary, Alberta and Lisa Clark, from Boston, Massachusetts, had a quick conversation. They shared about their variation of faux egg dessert dishes during the pre-heat challenge.
When Lisa asked Mary-Frances:
"Mary-Frances what are you making for your yolk?"
She replied she was making a mango pastry cream.
Listening to Mary-Frances, Lisa said she was making a passion fruit pastry cream. Spring Baking Championship's Lisa then asked Mary-Frances her plan for the rest of her egg.
"I'm going to make a banana coconut cake."
Listening to Mary-Frances' cake type, Lisa was excited, as she was also preparing something similar.
"Oh! I'm making a coconut cake."
However, Mary-Frances then shared via her private confessional:
"But I have to be very careful because I've been told that my taste can run on the tart side. So I'm hoping that the flavor of the slightly tart mango will be offset with a sweeter banana coconut cake. They want balance."
As illustrated, Spring Baking Championship's Mary-Frances was preparing: Banana, Coconut and Mango Faux Egg. She made mango pastry cream to fill the eggs, using banana coconut cake as the inside layer.
Additionally, she planned to decorate the faux eggs with a flower crown and a blonde chocolate shell on the outside. While preparing her eggs, Mary-Frances shared that she was going to get her eggs made so that then she would have "plenty of time" to decorate them:
"Because I'd really love to win an advantage basket."
Later on, Spring Baking Championship host Jesse Palmer went to Lisa and asked how she was doing. She stated that with her "chocolate eggs" preparation almost done, she was "feeling good."
The executive pastry chef said she was putting a coconut sponge cake inside her faux eggs. Seeing her working so fast, the host asked her plan to get the yolk component inside the sponge cake.
"I'm doing a passion fruit pastry cream," replied Lisa.
She added that she hadn't done anything "tropical spring flavor." Hence she wanted to surprise the judges with "a little something different."
"My strategy to win the advantage is to keep pushing myself to try new things, and hopefully that's going to impress the judges," she confessed.
The judges faced a dilemma when it was time to pick one out of many uniquely prepared faux egg dishes.
